Shropshire Chef Creates World’s First Blue Cheese Hot Sauce Using Genuine British Stilton

SHREWSBURY, UK. October 2nd, 2026 — Executive Chef Wayne Page has announced the creation of Sabrina’s Wrekin Havoc, officially establishing a culinary milestone as the world’s first blue cheese hot sauce crafted with genuine British Blue Stilton cheese and real butter.
While pairing chicken wings with blue cheese dip is an established staple across international dining, commercial manufacturers have historically relied on synthetic powders and artificial chemical flavouring to mimic blue cheese in shelf-stable formats. Liquid dairy fats typically split, spoil, or separate when mixed directly with acidic hot sauces over time.
Developed under Page’s independent enterprise, The Hidden Raven Co., Sabrina’s Wrekin Havoc solves this longstanding formulation challenge. Through a proprietary emulsion technique, real aged English Blue Stilton and unsalted butter are bound into aged fermented cayenne pepper, creating the world’s first genuine blue cheese hot sauce emulsion: rich, split-proof, ambient-stable, and completely free of artificial cheese flavourings or synthetic stabilisers.
Designed as an all-round everyday table sauce rather than a single-use dip, Sabrina’s Wrekin Havoc is crafted to elevate everyday meals, pairing across everything from gourmet sandwiches and breakfast brioches to grilled steaks, burgers, roasted vegetables, and chicken wings.

The result is a proper everyday table sauce with a strong Shropshire identity, inspired by the region’s folklore, history and characters. It’s the first step in a broader project uniting Celtic mythology, Welsh legend, and British food heritage into genuine culinary innovations for tables nationwide.”

The debut product is the first in an expanding series rooted in ancient regional folklore and mythology. While Sabrina’s Wrekin Havoc pays homage to Sabrina, goddess of the River Severn, alongside the legendary Wrekin Giant, upcoming releases under The Hidden Raven Co. include Merlin’s Dragon Fire, drawing on Welsh legend, followed by future heritage editions exploring Shropshire history, including a release inspired by Shrewsbury native Charles Darwin.
Ahead of a strictly limited retail batch of 200 boxed presentation units launching ahead of the festive season, the sauce is currently making its exclusive debut on the menu at The Museum Café in Shrewsbury town centre, where diners can experience it served fresh ahead of the national bottle rollout.
